French toast is a perfect way to start the day. You incorporate a great source of lean protein from the eggs, keeping you fuller for longer. The carbohydrates from the bread provide energy to fuel your day and the many vitamins and minerals from the fruit are essential for a healthy body.
I wanted to create a recipe that satisfied my sweet tooth, filled me up and fuelled me with wholegrain goodness, not empty calories. This version is delicious and full of good stuff…
- Crack two free range eggs (or one egg and two whites) in a wide dish.
- Add a splash of unsweetened almond milk – I like Alpro
- Sprinkle in half a tsp each of cinnamon and stevia sweetener – I like Truvia
- Add a splash of real vanilla extract (not essence)
Mix everything together with a fork and then lay a slice of wholegrain bread in the mixture. Turn after 20-30 seconds so the bread is soaked on both sides. Repeat with another slice of bread.
Spray a fine mist of coconut or avocado oil in a non stick pan and gently fry each slice for around 2 minutes on each side.
Defrost some frozen raspberries and add a little honey. Spread in the centre of one of the slices. Cut a pretty shape using a cookie cutter out of the other slice of toast and place on top of the raspberry covered slice.
Serve with more fresh raspberries and a dusting of icing sugar.
