Cauliflower Crust Pizza

This is a fantastic recipe for an alternative to wheat based pizzas. Whether you have a wheat/gluten intolerance or are on a low cal/low carb eating plan, this makes a really delicious, healthy meal.

Ingredients for the base:

  • 1 head of cauliflower broken into florets.
  • 1/4 cup Parmesan chesse (grated)
  • 1 tsp Garlic puree
  • 1 tsp Pizza seasoning (found in the spices aisle)
  • 1 tsp Dried oregano
  • 1 egg
  • Salt and pepper
  • (Toppings of your choice including mozzarella cheese and tomato pizza sauce)

Blitz the raw cauliflowers in the food processor until it resembles cauliflower rice. This only takes around 30 seconds and I blitzed one half of the cauliflower at a time.

Trasfer to a clean bowl and cover with cling film. Piece a whole in the top and microwave for 7 minutes. Alternatively steam over boiling water for 7 mins.

Once cooked, spread the cauliflower out onto a clean tea towel and let it cool a little.

Next gather up the tea towel and squeeze out all the water from the cauliflower. This is an important step, otherwise you will have a very soggy base!

Then transfer the cauliflower back to a bowl and add in all the other ingredients and combine with your hands.

Line a baking tray with baking paper and spray with a little olive oil to ensure the bases don’t stick, then on to the trays shape your mixture into one large or two smaller pizza bases. Bake them for 15-20 minutes until they start to turn golden. Then add any toppings you like and bake again until the cheese has melted.
